Induction cooking has become widely used and offers many advantages. But how does the technology work?
An alternating current passes through a coil beneath each cooking zone. This creates electrical currents in the base of a pan or pot placed on the hob, provided it contains a magnetic material. Those currents heat the cookware and its contents.
Not sure whether your pans work on induction? Place a magnet against the underside of the base. If it sticks, the pan is induction compatible.
- Fast heating
An induction hob reaches the required temperature much faster than many traditional electric hobs, with speed comparable to gas.
- Greater temperature control
Temperature changes take effect quickly, reducing the risk of food burning or boiling over.
- Lower risk of burns
Induction heats the cookware rather than the cooking zone directly. Once the cookware is removed, the surface cools quickly, though some residual heat may remain.
- Efficient energy use
Because energy is transferred directly to the cookware, less heat is wasted compared with conventional electric cooking.
