This page primarily provides guidance for our cutting boards, as these are generally the wooden products exposed to the most wear.
Important information about wooden cutting boards
When choosing a wooden cutting board, you do not need to worry about poor hygiene as long as you take a few precautions. The myth that plastic offers better protection against bacteria has been disproved. Tests conducted by the Danish Technological Institute have shown that wood is a hygienic material in which bacteria have poorer living conditions than on other materials, such as plastic.
However, you should never put a wooden cutting board in the dishwasher. It is therefore important to clean it thoroughly by hand with water and washing-up liquid, especially after handling meat.
As a general rule, none of our wooden products should be put in the dishwasher.
Use and care of cutting boards
It is a good idea to have at least two different cutting boards in your kitchen, and preferably more: one for fresh meat and fish, and one for fruit and vegetables. Use each board only for its intended purpose, every time. By keeping the boards separate and cleaning them thoroughly, you reduce the risk of bacteria spreading from one board to another.
Keep the following precautions in mind when using and cleaning your cutting boards:
- Use separate cutting boards for meat and vegetables
- Change both the knife and cutting board when switching between preparing meat and vegetables
- Change or wash the knife and cutting board immediately after using them for raw meat
- Keep raw meat separate from ready-to-eat foods such as salad and bread
- Clean wooden cutting boards with washing-up liquid, rinse with water as hot as possible and dry thoroughly
- Store your cutting boards in a dry place.
Give your cutting board some care
When you buy one of our wooden cutting boards, we recommend sanding and oiling it before or shortly after first use. The grain will quickly rise when the board is used, making the surface feel rough. Sand along the grain with fine sandpaper, rinse with water, dry it and finish by spraying on our wood oil and spreading it evenly with a dry cloth. See how below.
